Tuna Croquettes

1 cup grated Swiss cheese
2 cups bread crumbs
¼ cup chopped parsley
3 tbsp butter
¼ cup flour
salt and pepper
1 cup milk
2 cans (13 oz) tuna
2 eggs
1 small onion
oil for frying
For coating;
2 tbsp milk
1 egg
1 cup bread crumbs

Add grated cheese to 1 cup bread crumbs.
Make a white sauce with the flour, butter and milk (see sauces on page __ for method) and add it to the tuna.
In food processor, combine parsley onion and 2 of the eggs. Add this mixture to the tuna and white sauce in a saucepan and cook on the stove over medium heat, stirring, for 10 minutes; add to the cheese/bread crumb mixture. Allow to cool
Mix egg and milk together and put bread crumbs in a separate bowl. Shape tuna mixture into 1 ½ inch ovals and roll in egg then bread crumbs. Deep fry until golden and serve asap.

Grandpa’s Grilled Salmon

Apple or cherry woodchips that have been soaked for ½ hour before grilling time
2 salmon steaks
juice of 2 lemons
¼ tsp dill
¼ tsp thyme
1 clove garlic

   Put above mixture in a plastic Ziploc bag with the salmon steaks and marinate in the fridge for 2-8 hours.
Put the woodchips over the hot coals. Grill salmon, covered, 3-5 minutes on each side.
Serve with dill sauce on page ___ in sauce chapter.

Mom’s Grilled Salmon

    My salmon recipe is a lot less involved, and may be too plain for some tastes, but it works really well for me. I think if you serve it with the dill sauce, it will probably satisfy everyone.

Mesquite charcoal (try to get the real mesquite stuff, not the briquettes. This stuff generally looks pretty primitive, but is very good and burns well, also)
1 salmon filet, skin on

    Place the salmon filet over hot grill on a piece of foil, cover. Cook about 10 minutes. Be sure not to over cook as it will dry out. When removing the salmon from the foil, the skin will stick, so it is very easy to de-skin for service. That’s it! Easy as can be.

Tuna Casserole

This is a great, down home, comfort food.

1 can mushroom soup
1 can tuna, drained
½ cup milk
¼ cup celery
¼ cup mayonnaise
1 cup frozen peas
½ pkg (8 oz) noodles, cooked (especially good with home-made noodles)
1 cup shredded cheddar cheese
1 cup potato chips, crumbled

    Combine mushroom soup, tuna and milk in a bowl. Add next 5 ingredients and mix.
Pour into a casserole dish and top with the potato chips.
Bake at 350 degrees for 30 minutes.

Crab Cakes

4TB butter
1/4 chopped onion
1/4 cup chopped celery
1/4 cup chopped red pepper
1 clove garlic minced
8 oz crabmeat
1/2 cup bread crumbs
1/4 cup mayo
1 1/2 tsp worcestershire
1 tsp lemon juice
1 beaten egg

Saute onion, celery, pepper and garlic until tender. Off heat,
add remaining ingredients. Chill for easier handling. Form into patties and saute in butter for 8-9 minutes.
